Cashew, cranberry and spice biscotti

These Christmas biscuits are great for dunking into a hot cup of coffee, hot chocolate or even mulled wine for a change to mince pies.

  • 100g/3½oz wholemeal flour
  • 100g/3½oz self-raising flour, plus extra for dusting
  • 75g/2¾oz soft light brown sugar
  • 75g/2¾oz dried cranberries
  • 75g/2¾oz raw, unsalted cashew nuts, roughly chopped
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • pinch salt
  • 2 free-range eggs
  • 1 vanilla pod, seeds scraped out or 1 tsp vanilla extract
