Beef shin and blue cheese cobbler

Ingredients

For the beef shin

  • 1kg/2lb 4oz shin of beef
  • plain flour, for dusting
  • 1 tbsp olive oil
  • 100g/3½oz butter
  • 150g/5½oz smoked panetta, roughly chopped
  • 4 onions, thinly sliced
  • ½ head celery, thinly sliced
  • 2 tbsp soft brown sugar
  • 2 tbsp red wine vinegar
  • 500ml/18fl oz dark Belgian beer
  • 1–2 bay leaves
  • 2 thyme sprigs
  • 1 head garlic, cut in half
  • salt and freshly ground black pepper
  • 1 tbsp finely chopped parsley, to garnish

For the topping

  • 250g/9oz self-raising flour
  • 50g/1¾oz butter, chopped
  • 1 tsp salt
  • 1 tsp finely chopped thyme
  • 150g/5½oz Stilton, crumbled
  • 150ml/5fl oz milk
