Ingredients

For the lamb

  • ½ tsp table salt
  • ½ tsp freshly ground black pepper
  • ½ tsp ground cumin
  • ½ tsp ground fennel seeds
  • 2 untrimmed racks lamb, separated into single chops

For the salad

  • 50g/1¾oz walnuts
  • 2 large shallots, thinly sliced
  • 6 sage leaves
  • pinch salt
  • pinch sugar
  • 3 tbsp red wine vinegar or sherry vinegar
  • 1 bag rocket
  • 6 fresh figs, quartered

For the flatbreads

  • 400g/14oz plain flour
  • 1 tsp dried yeast
  • ½ tsp salt
  • ½ tsp caster sugar
  • 1 tbsp honey
