Ingredients

For the spiced aubergine

  • 1 tsp ground turmeric
  • ½ tsp chilli powder
  • 1 tsp salt
  • 4 medium aubergines, thinly sliced into discs
  • oil, for frying

For the garlic raita

  • 500g/1lb 2 oz full-fat Turkish or Greek yoghurt
  • 6 garlic cloves, crushed
  • ½ tsp chilli powder
  • 1 tsp salt
  • ½ tsp brown sugar

For the tempering

  • 10 fresh curry leaves
  • 3 dried red chillies, broken in half
