Ingredients

For the crème diplomat

  • 500ml/18fl oz full-fat milk
  • 125g/4½oz caster sugar
  • 6 free-range egg yolks
  • 40g/1½oz cornflour
  • 1 vanilla pod, split lengthways
  • 300ml/10fl oz double cream

For the pastry

  • 125g/4½oz plain flour
  • 50g/1¾oz icing sugar
  • pinch fine sea salt
  • 60g/2¼oz unsalted butter, cold, cubed, plus extra for greasing
  • ½ medium free range egg

For the topping

  • 250g/9oz fresh strawberries, hulled
  • 2 tbsp runny honey, for drizzling
  • few leaves fresh basil
