Ingredients

For the kapsalon

  • 2 chicken thighs, skin removed
  • 2 tbsp olive oil

For spice mix

  • 1 tsp cayenne pepper
  • 1 tbsp dried oregano
  • 1 tbsp garlic powder
  • ½ tsp ground cardamom
  • pinch allspice
  • pinch ground cloves
  • ½ tsp ground cinnamon
  • pinch ground nutmeg
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • salt and freshly ground pepper

To serve

  • 1 large handful frozen French fries
  • 1 tomato, thinly sliced, seeds discarded
  • ½ red onion, thinly sliced
  • ¼ cucumber, thinly sliced
  • 75g/2½oz Gouda cheese, grated
  • 2 tbsp chilli sauce
  • 2 tbsp garlic sauce
