  • 4 slices smoked streaky bacon
  • 500g/1lb 2oz baby potatoes
  • 1 bay leaf
  • 1 tbsp pork fat
  • 10g/1/3oz unsalted butter
  • 1 tbsp plain flour
  • 200ml/7fl oz beef stock
  • 100ml/3½fl oz chicken stock
  • 50ml/2fl oz malt vinegar
  • 150g/5½oz curd cheese or hard mozzarella
  • black pepper, to taste
