Ingredients

  • 2 tbsp olive oil, for frying
  • 2 garlic cloves, sliced
  • 2 x 400g tins plum tomatoes
  • ¼ tsp bicarbonate of soda
  • pinch caster sugar
  • 3–4 basil leaves, plus extra to garnish
  • 3 large aubergines, peeled and sliced
  • 4 tbsp vegetable oil, for frying
  • 300g/10½oz spaghetti
  • salt and freshly ground black pepper
  • 100g/3½oz vegan hard cheese, to serve
