Ingredients

For the marzipan cake

  • 225g/8oz butter, at room temperature, plus extra for greasing
  • 300g/10½oz caster sugar
  • 4 free-range eggs, beaten
  • 275g/9¾oz plain flour, plus extra for dusting
  • 100g/3½oz ground almonds
  • 1½ tsp baking powder
  • 100ml/3½fl oz soured cream
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 250g/9oz marzipan

For the decoration

  • 2 oranges, peeled and sliced
  • 50g/1¾oz unsalted butter
  • 100g/3½oz caster sugar
  • 1 tbsp julienned orange peel
  • 4 fresh mint sprigs
  • 50g/1¾oz flaked almonds, toasted
  • 25g/1oz icing sugar, to sprinkle
