Ingredients

For the limoncello

  • 500ml/18 fl oz vodka
  • 3 lemons, rinds only (white pith removed)
  • 300g/10½ oz caster sugar

For the lemon syrup

  • 1 unwaxed lemon, juice and rind (white pith removed)
  • 50g/1¾ oz caster sugar

For the lemon tiramisu

  • 2 free range eggs, yolks and whites separated
  • 80g/3 oz caster sugar
  • 250g/9 oz mascarpone
  • 2 tbsp limoncello (see method above for homemade)
  • 1 unwaxed lemon, zest only
  • 200g/7 oz savoiardi biscuits
