Gin and tonic granita

This light, and slightly boozy dessert is the perfect way to finish a heavy meal. The apple caramel adds a sweetness to an otherwise sharp, refreshing dish.

  • 170ml/6fl oz good quality gin
  • 500ml/18fl oz tonic
  • 1 lemon, juice only
  • 2 Bramley apples, peeled and grated
  • 500ml/18fl oz apple juice
  • 50g/1¾oz butter
  • 2 Braeburn apples, diced
