For the spinach juice

  • 500g/1lb 2oz spinach
  • 120ml/4fl oz wheatgrass juice
  • 1 tbsp apple cider vinegar
  • salt

For the wheatgrass emulsion

  • 100g/3½oz fresh wheatgrass, chopped
  • 25ml/¾fl oz wheatgrass juice
  • 20ml/¾fl oz apple cider vinegar
  • 1 tsp Dijon mustard
  • 150ml/5fl oz grapeseed oil

For the steak

  • 280g/10oz Holstein sirloin or rib-eye steak
  • 100g/3½oz beef fat
  • 50g/1¾oz bone marrow, soaked in salt water and diced
  • 20 fresh wheatgrass blades, finely chopped, plus 30 blades to garnish
  • 1 tsp fermented wheatgrass
  • salt
