  • 1 pitta bread, cut into strips
  • 1 tbsp olive oil
  • large pinch za’atar spice mix
  • 50g/1¾oz butter
  • 2–3 spring onion, roughly chopped
  • ½ tsp red chilli flakes
  • 250g/9oz ricotta
