Turkey and spinach soup with sweetcorn dumplings

Ingredients

For the dumplings

  • 1 tbsp olive oil
  • 2 corn on the cob
  • 200g/7oz self-raising flour
  • 60g/2¼oz butter
  • 1 tbsp finely chopped chives
  • salt and freshly ground black pepper

For the soup

  • 8 turkey oysters or 1 large turkey breast
  • 1 carrot, peeled and roughly chopped
  • 1 onion, roughly chopped
  • 1 garlic clove, roughly chopped
  • 1 thyme sprig
  • 1 bay leaf
  • 225g/8oz baby spinach
  • nutmeg, for grating
  • salt and freshly ground black pepper
  • pinch smoked paprika
