Ingredients

For the truffles

  • 100ml/3½fl oz maple syrup
  • 1 red chilli, finely diced
  • 1 tsp sea salt flakes
  • 400g/14oz dark chocolate, chopped into small chunks
  • 25g/1oz cocoa powder, for rolling
  • 400g/14oz milk chocolate, for coating

For the decoration

  • 100g/3½oz white chocolate, broken into small pieces
  • 200g/7oz caster sugar
  • edible red shimmer powder
